Irresistible Garlic Butter Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

6 tbsp unsalted butter, divided

5 cloves garlic, minced

1/2 tsp red pepper flakes (optional)

1 cup cherry tomatoes, halved

1/2 cup chicken broth or white wine

1 lemon, juiced and zested

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp in a single layer and season with salt and pepper. Cook for about 1-2 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the garlic butter: In the same skillet, add the remaining 4 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant.

        Add the tomatoes and liquid: Stir in the cherry tomatoes and cook for about 3-4 minutes until they start to soften. Pour in the chicken broth or white wine, lemon juice, and zest. Let the sauce simmer for 2-3 minutes.

          Combine pasta and shrimp: Reduce the heat to low, then return the cooked shrimp to the skillet, along with the cooked fettuccine. Toss to combine, adding reserved pasta water as needed to loosen the sauce. Adjust seasoning with salt and pepper.
