Ingredients

For the Base:

1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/3 cup unsalted butter, melted

1/4 cup brown sugar

1/4 teaspoon salt

For the Filling:

1 can (15 oz) crushed pineapple, drained

1/2 cup sweetened condensed milk

1/2 cup cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/4 cup chopped macadamia nuts (optional)

For Garnish:

Extra shredded coconut (to sprinkle on top)

Whipped cream (for serving)

Instructions

Prepare the Base:

    - Preheat your oven to 350°F (175°C).

      - In a large mixing bowl, combine graham cracker crumbs, shredded coconut, melted butter, brown sugar, and salt. Mix until the crumbs are evenly coated and resemble wet sand.

        - Press the mixture firmly into the bottom of an 8x8 inch baking dish to create the crust. Bake for 10 minutes or until lightly golden. Remove from the oven and let cool slightly.

          Make the Filling:

            - In a separate bowl, whisk together the drained crushed pineapple, sweetened condensed milk, cream cheese, granulated sugar, vanilla extract, and chopped macadamia nuts (if using) until smooth and creamy.

              Assemble the Bars:

                - Pour the pineapple filling over the pre-baked crust and spread it evenly.

                  - Sprinkle extra shredded coconut on top for added texture and sweetness.

                    Bake:

                      - Bake in the preheated oven for an additional 25-30 minutes, or until the edges are golden and the center is set.

                        Cool and Serve:

                          - Allow the bars to cool at room temperature for about 1 hour, then refrigerate for at least 2 hours before slicing into squares.

                            - Serve chilled, topped with a dollop of whipped cream if desired.
