Ingredients
  

1 can (14.75 oz) wild-caught salmon, drained and flaked

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup finely chopped red onion

1/4 cup finely chopped bell pepper (red or yellow)

2 cloves garlic, minced

1 large egg, lightly beaten

2 tbsp fresh parsley, chopped

1 tbsp Dijon mustard

1 tsp Worcestershire sauce

Salt and freshly ground black pepper to taste

Olive oil for frying

Lemon wedges for serving (optional)

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped red onion, and bell pepper.

    Add the minced garlic, beaten egg, parsley, Dijon mustard, and Worcestershire sauce to the bowl. Season with salt and pepper.

      Mix all the ingredients until well combined. If the mixture is too wet, add a few more breadcrumbs until you reach a workable consistency.

        Shape the mixture into patties (about 2-3 inches in diameter), making sure they are compact so they hold together during cooking.

          Heat a generous swirl of olive oil in a skillet over medium heat. Once hot, add the patties, cooking in batches to avoid overcrowding.

            Cook the patties for about 4-5 minutes on each side or until they are golden brown and crispy.

              Transfer cooked patties to a paper towel-lined plate to absorb excess oil.

                Serve warm with lemon wedges on the side for squeezing over the patties.
