2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, sliced into half moons

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon paprika

Salt and pepper, to taste

1 cup spinach or kale, roughly chopped

1/4 cup feta cheese, crumbled (optional)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare Your Ingredients: Gather and measure all ingredients to ensure an efficient cooking process.

    Cook the Beef: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes. Season with salt, pepper, paprika, and half of the oregano and basil. Once cooked, transfer the beef to a plate and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and cook for 2-3 minutes until they start to soften. Then, add the minced garlic, diced red bell pepper, and zucchini. Sauté for an additional 5-7 minutes until the vegetables are tender.

        Combine: Return the cooked ground beef to the skillet, then add the cherry tomatoes along with the remaining oregano and basil. Toss everything together until heated through.
