3 medium zucchinis

1 cup breadcrumbs (panko recommended for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

¼ cup all-purpose flour

Cooking spray (or olive oil for drizzling)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis, and cut them into fry-shaped sticks, about 3-4 inches long. Pat them dry with a paper towel to reduce moisture, which helps achieve a crunchier texture.

      Set Up Breading Station: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well. In another shallow bowl, beat the eggs. Place the all-purpose flour in a third bowl.

        Coat the Zucchini: Dip each zucchini fry first into the flour, making sure to coat completely and shake off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the zucchini in the breadcrumb mixture until fully coated.
