For the Beef Marinade:

1 lb (450g) flank steak or skirt steak

¼ cup soy sauce

2 tablespoons brown sugar

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon gochujang (Korean red chili paste)

1 tablespoon rice vinegar

1 teaspoon black pepper

1 tablespoon sesame seeds

For the Tacos:

8 small corn or flour tortillas

1 cup thinly shredded cabbage (green or purple)

1 ripe avocado, sliced

1 cup chopped fresh cilantro

½ cup radish, thinly sliced (for garnish)

1 lime, cut into wedges

For the Spicy Cream Sauce:

½ cup sour cream or Greek yogurt

1 tablespoon mayonnaise

1 tablespoon gochujang

1 teaspoon lime juice

Salt and pepper to taste

Instructions
 

Prepare the Marinade: In a bowl, whisk together soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, rice vinegar, black pepper, and sesame seeds.

    Marinate the Beef: Place the flank or skirt steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it’s well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Make the Spicy Cream Sauce: In a small bowl, combine sour cream (or Greek yogurt), mayonnaise, gochujang, and lime juice. Mix well and season with salt and pepper to taste. Set aside in the fridge to chill.

        Cook the Beef: Preheat a grill or a cast-iron skillet over medium-high heat. Remove the steak from the marinade, allowing excess marinade to drip off. Grill or sear the steak for about 3-5 minutes on each side, or until your desired doneness is reached (best cooked medium-rare for tenderness). Remove from heat and let it rest for 5-10 minutes.

          Prepare the Tacos: While the beef is resting, warm the tortillas on the grill or in a skillet until they are pliable.

            Slice the Beef: Thinly slice the beef against the grain.
