For the Beef Marinade:

1 lb flank steak, thinly sliced against the grain

¼ cup soy sauce

3 tbsp brown sugar

2 tbsp sesame oil

2 tbsp rice vinegar

4 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp red pepper flakes (adjust to taste)

2 green onions, chopped

For the Slaw:

2 cups Napa cabbage, thinly sliced

1 cup carrots, julienned

½ cup cilantro, chopped

3 tbsp rice vinegar

1 tbsp sesame oil

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

1 avocado, sliced

1 lime, cut into wedges

Sesame seeds (for garnish)

Extra chopped green onions and cilantro (for garnish)

Instructions
 

Marinate the Beef: In a bowl, mix together soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, red pepper flakes, and chopped green onions. Add the sliced flank steak, coating it well. Cover and marinate for at least 30 minutes (or refrigerate for up to 4 hours for deeper flavor).

    Prepare the Slaw: In another bowl, combine the Napa cabbage, carrots, cilantro, rice vinegar, and sesame oil. Toss well, and season with salt and pepper to taste. Set aside to let the flavors meld.

      Cook the Beef: Heat a large skillet or grill pan over medium-high heat. Remove the beef from the marinade (discard excess marinade) and cook in the hot pan for about 3-4 minutes per side or until desired doneness is reached. Remove from heat and let it rest for a few minutes.

        Warm the Tortillas: While the beef is resting, warm the tortillas in a dry skillet or microwave until soft and pliable.

          Assemble the Tacos: Layer the cooked beef onto each warmed tortilla. Top with a generous scoop of the cabbage slaw, slices of avocado, and sprinkle sesame seeds on top. Garnish with chopped green onions and cilantro.
