Korean BBQ Meatballs with Spicy Mayo Dip

1 pound ground beef (or ground pork for a different flavor)

1/4 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon gochujang (Korean chili paste)

1/2 teaspoon black pepper

1 egg, beaten

Sesame seeds and additional green onions for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 teaspoon sriracha (adjust more for extra heat)

1 teaspoon lime juice

A pinch of salt

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, brown sugar, gochujang, black pepper, and beaten egg. Mix until well combined but do not overmix.

      Form the Meatballs: Using your hands, form the mixture into meatballs about 1 inch in diameter. Arrange them on the prepared baking sheet, spacing them evenly.

        Bake the Meatballs: Bake in the preheated oven for 15-20 minutes or until they are cooked through and lightly browned.

          Make the Spicy Mayo Dip: While the meatballs are baking, prepare the dip. In a small bowl, mix together the mayonnaise, gochujang, sriracha, lime juice, and a pinch of salt. Adjust the flavors to your preference, adding more spice if desired.

            Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Transfer them to a serving platter and garnish with sesame seeds and additional chopped green onions. Serve with the spicy mayo dip on the side.
