Ingredients

1 ½ cups all-purpose flour

1 cup fresh blueberries (or frozen, if preferred)

½ cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large egg

½ cup Greek yogurt

¼ cup vegetable oil (or melted coconut oil)

2 tablespoons lemon juice (freshly squeezed)

Zest of 1 lemon

½ teaspoon vanilla extract

Optional: 2 tablespoons coarse sugar for topping

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt. Stir until well mixed.

Prepare Wet Ingredients: In a separate bowl, whisk together the egg, Greek yogurt, vegetable oil, lemon juice, lemon zest, and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently mix until just combined—do not overmix! The batter should be slightly lumpy.

Fold in Blueberries: Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.

Scoop and Fill: Use a spoon or an ice cream scoop to fill each muffin cup about ¾ full. If you like a bit of extra crunch, sprinkle the optional coarse sugar on top of each muffin.

Bake: Place the muffin tin in the oven and bake for 18-22 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool Down: Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, transfer them to a wire rack to cool completely.

Serve: Enjoy your zesty blueberry muffins warm or at room temperature. They pair perfectly with a warm cup of coffee or tea!
