1 ½ cups rolled oats

½ cup whole wheat flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 teaspoon cinnamon

½ cup honey or maple syrup

½ cup unsweetened applesauce

1 teaspoon vanilla extract

Zest of 1 lemon

1 tablespoon lemon juice

1 cup fresh or frozen blueberries

Optional: ¼ cup chopped nuts (e.g., almonds or walnuts) for extra crunch

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Stir until evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the honey (or maple syrup), applesauce, vanilla extract, lemon zest, and lemon juice until smooth.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients and stir until everything is well combined. Gently fold in the blueberries and nuts, if using.

          Spread and Bake: Pour the mixture into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.

            Cool and Cut: Allow the bars to cool in the pan for at least 15 minutes before lifting out using the parchment overhang. Transfer to a wire rack to cool completely before cutting into squares.
