1 cup all-purpose flour

1/2 cup powdered sugar

1/2 cup unsalted butter, softened

8 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

Zest of 2 lemons

1/2 cup fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

    Prepare the Crust: In a medium bowl, combine the all-purpose flour and powdered sugar. Mix in the softened butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of the prepared pan to form an even crust.

      Bake the Crust: Bake the crust in the preheated oven for about 15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.

        Make the Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition.

          Add Flavorings: Stir in the lemon zest, fresh lemon juice, vanilla extract, and salt. Mix until well combined and no lumps remain.

            Combine and Bake: Pour the cream cheese filling over the baked crust and spread it evenly. Return the pan to the oven and bake for another 25-30 minutes, or until the filling is set and the edges are lightly golden.

              Cooling: Remove the bars from the oven and allow them to cool in the pan on a wire rack. Once cooled to room temperature, refrigerate for at least 2 hours to set completely.

                Serve: Once chilled, cut into squares and dust with powdered sugar, if desired. Serve cold for a refreshing treat!
