Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup unsalted butter, softened

4 oz cream cheese, softened

1 large egg

1/4 cup milk

1 tablespoon lemon zest (from about 1 lemon)

2 tablespoons fresh lemon juice

1/2 teaspoon vanilla extract

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Cream the Butter and Cheese: In a separate large bowl, beat the softened butter and cream cheese using an electric mixer until the mixture is smooth and creamy.

Add Wet Ingredients: Mix in the egg, milk, lemon zest, lemon juice, and vanilla extract to the cream cheese mixture, blending until fully incorporated.

Combine Mixtures: Gradually add the dry flour mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for approximately 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are lightly golden.

Cool and Serve: Allow muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. If desired, dust with powdered sugar before serving.
