2 whole trout, cleaned and scaled

2 tablespoons olive oil

Juice of 2 lemons (approximately 1/4 cup)

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon fresh dill, chopped (or 1/3 teaspoon dried dill)

Salt and black pepper to taste

Lemon slices (for garnish)

Fresh dill sprigs (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped dill, salt, and black pepper.

      Prepare the Trout: Rinse the trout under cold water and pat it dry with paper towels. Place the fish on the prepared baking sheet.

        Marinate the Fish: Spoon the citrus-dill marinade over the trout, making sure to coat the inside cavity of the fish as well. If desired, you can score the skin of the trout a few times to help the marinade penetrate more deeply.

          Garnish with Lemon: Place a few lemon slices inside the cavity of each trout for extra flavor.

            Bake the Trout: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the fish flakes easily with a fork and is cooked through.

              Check for Doneness: If using a meat thermometer, the internal temperature of the fish should reach 145°F (63°C).

                Serve: Remove the trout from the oven and garnish with fresh dill sprigs. Serve with your choice of sides, such as roasted vegetables, rice, or a fresh salad.
