Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 2 lemons

1/4 cup fresh lemon juice

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh raspberries (or frozen, thawed)

1/2 cup powdered sugar (for dusting, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Add Eggs and Flavorings: Beat in the eggs one at a time, mixing well after each addition. Then, add the lemon zest and lemon juice, blending until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

Mix Together: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Fold in Raspberries: Gently fold in the fresh raspberries, taking care not to break them up too much to keep their shape.

Shape the Cookies: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set.

Cool and Dust: Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. If desired, dust with powdered sugar before serving.

Serve and Enjoy: These cookies are best enjoyed fresh, but can be stored in an airtight container for up to a week. Perfect with a cup of tea or coffee!
