1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 tablespoons lemon zest (from about 2 lemons)

2 tablespoons fresh lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh raspberries (or frozen, but thawed and drained)

1 teaspoon vanilla extract

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes using an electric mixer.

      Add Egg and Flavorings: Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture, mixing until well combined.
