    Prepare the Batter: In a large mixing bowl, combine the Greek yogurt, egg yolks, 3/4 cup of granulated sugar, and vanilla extract. Mix well until smooth and creamy.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, and lemon zest (if using) until well blended. Gradually add this mixture to the yogurt mixture, stirring until just combined.

        Whip the Egg Whites: In a separate clean bowl, use an electric mixer to beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of sugar, continuing to beat until stiff peaks form.
