2 ripe avocados

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese

Cooking spray or oil for frying

Optional toppings: Crumbled bacon, shredded cheese, chopped cilantro, sour cream, sriracha

Instructions
 

Prepare the Avocados: Cut the avocados in half, remove the pits, and carefully scoop out the flesh. Cut the avocado into wedges or strips (about 8 pieces per half).

    Set up Breading Station: In three separate shallow dishes, place the all-purpose flour in one, beaten eggs (with a splash of water or milk) in the second, and mix the panko breadcrumbs with garlic powder, onion powder, smoked paprika, salt, pepper, and grated Parmesan in the third.

      Bread the Avocado Wedges: Take each avocado piece and first dredge it in flour, coating it evenly. Shake off excess flour, then dip it in the egg wash, allowing any excess to drip off. Finally, coat it thoroughly in the panko mixture, pressing gently to adhere. Place the breaded avocado fries on a plate or baking sheet.

        Cook the Avocado Fries: Preheat your air fryer to 375°F (190°C) or heat oil in a deep frying pan. For air frying, lightly spray each avocado fry with cooking spray for extra crispiness. Arrange them in a single layer in the air fryer basket and cook for about 8-10 minutes, until golden and crispy. If frying, carefully add the coated avocado fries into the hot oil and fry for 2-3 minutes per side until crispy and golden brown. Remove and place them on a paper towel-lined plate to drain excess oil.

          Serve and Load Up: Once cooked, transfer the avocado fries to a serving platter. Top with crumbled bacon, additional shredded cheese, and chopped cilantro. Serve them warm with a side of sour cream and sriracha for dipping.
