Ingredients

4 large bell peppers (any color)

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup cooked and crumbled bacon (about 8 slices)

1/2 cup green onions, chopped

1/2 cup sour cream

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place the cleaned peppers upright in a baking dish.

Make the Filling: In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped green onions, sour cream, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Mix until well combined.

Stuff the Peppers: Generously fill each bell pepper with the cheese and bacon mixture, mounding it on top if necessary.

Bake the Peppers: Pour about 1/2 cup of water into the bottom of the baking dish (this helps steam the peppers while they cook). Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Broil for Extra Flavor (Optional): After 25 minutes, remove the foil and switch your oven to broil. Broil for an additional 5-7 minutes, until the tops are golden and bubbly.

Serve and Garnish: Remove from the oven and let cool slightly. Garnish with fresh chopped parsley before serving.

Enjoy: Serve warm and enjoy your delicious low-carb loaded bacony goodness!
