4 large russet potatoes, peeled and cubed

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup cooked and crumbled bacon

1/2 cup green onions, chopped

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/2 cup additional shredded cheese for topping

1/4 cup butter, melted

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, boil the cubed potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly.

      In a large bowl, mash the cooked potatoes until smooth. Stir in the sour cream, milk, garlic powder, onion powder, salt, and pepper until well combined.

        Fold in the cooked bacon, chopped green onions, and 1 cup of shredded cheddar cheese until evenly distributed.

          Transfer the potato mixture to a greased 9x13-inch baking dish and spread it out evenly.

            Drizzle the melted butter over the top of the casserole and sprinkle with the additional cheese.

              Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown on top.

                Once done, let it cool for a few minutes before serving. Garnish with extra green onions if desired.
