3 pounds russet potatoes, peeled and cubed

1 cup sour cream

1/2 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup unsalted butter, melted

1/4 cup milk (or more for desired consistency)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1 cup cooked and crumbled bacon

1/2 cup green onions, chopped (for garnish)

Extra cheddar cheese for topping

Instructions
 

Prep the Potatoes: Fill a large pot with water and add the cubed russet potatoes. Bring it to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes. Drain well.

    Mash the Potatoes: In the pot, add the drained potatoes back in. Add in the sour cream, cream cheese, melted butter, and milk. Use a potato masher or hand mixer to mash until creamy and smooth.

      Mix in the Flavors: Stir in the sharp cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper until evenly mixed. Fold in the crumbled bacon, reserving some for topping.

        Transfer to Baking Dish: Preheat your oven to 375°F (190°C). Pour the potato mixture into a lightly greased 9x13 inch baking dish, spreading it out evenly.

          Add the Cheese Topping: Sprinkle additional shredded cheddar cheese over the top of the mashed potato mixture. Optionally, sprinkle the reserved bacon bits on top as well.

            Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
