Loaded Steak & Cheese Quesadillas – So Cheesy!

1 lb flank steak, thinly sliced

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

2 tbsp olive oil

1 medium onion, sliced

1 bell pepper (any color), sliced

2 cups shredded cheese (a mix of Monterey Jack and cheddar)

4 large flour tortillas

Sour cream, for serving

Fresh cilantro, chopped, for garnish

Jalapeño slices (optional), for garnish

Instructions
 

Marinate the Steak: In a bowl, combine the flank steak with smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the spices into the meat and let it marinate for at least 15 minutes.

    Cook the Steak: Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the marinated steak and cook for about 5-7 minutes, or until browned and cooked through. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining olive oil. Toss in the sliced onion and bell pepper. Sauté for 4-5 minutes, or until the vegetables are softened and slightly caramelized. Remove from heat.

        Assemble Quesadillas: Lay one tortilla on a clean surface. Sprinkle a generous amount of the shredded cheese over half of the tortilla. Add a slice of cooked steak, followed by a portion of sautéed onions and peppers. Top with a little more cheese before folding the tortilla in half.

          Cook Quesadillas: Wipe the skillet clean and return it to the heat over medium. Place the folded quesadilla onto the skillet and cook for 3-4 minutes on each side, or until golden brown and the cheese is fully melted. Repeat with the remaining tortillas.

            Slice and Serve: Carefully remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges. Serve hot with sour cream, fresh cilantro, and jalapeño slices for an extra kick!
