2 live lobsters (about 1-1.5 lbs each)

4 cups fish stock or seafood broth

1 cup heavy cream

4 medium potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

3 strips bacon, diced

2 tablespoons butter

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Lobsters: Bring a large pot of salted water to a boil. Add the live lobsters and cook for about 8-10 minutes or until they turn bright red. Remove them from the pot and allow them to cool. Reserve some cooking water for later use if preferred.

    Prepare the Lobster Meat: Once cool enough to handle, break the lobsters and remove the meat from the claws and tails. Chop the meat into bite-sized pieces, discarding the shell. Set aside the lobster meat.

      Cook the Bacon: In a large pot, cook the diced bacon over medium heat until crisp. Remove and drain on paper towels, leaving the bacon fat in the pot.

        Sauté Vegetables: Add the butter to the same pot with the bacon fat. Once melted, add the chopped onion and cook until translucent (about 4-5 minutes). Stir in the minced garlic and cook for an additional minute.

          Add Potatoes and Stock: Add the diced potatoes to the pot and pour in the fish stock. Bring to a boil, then reduce the heat and simmer until the potatoes are tender (about 15-20 minutes).

            Incorporate Cream and Seasonings: Stir in the heavy cream, corn, thyme, paprika, and cooked bacon. Allow the chowder to simmer gently for another 5 minutes. Then, fold in the chopped lobster meat and gently stir until heated through. Season with salt and pepper to taste.

              Serve: Ladle the chowder into bowls, garnish with fresh parsley, and serve with lemon wedges on the side for a zesty finish.
