1 pound elbow macaroni

2 lobsters (about 1.5 pounds each, cooked and meat removed, shells reserved)

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional)

1/4 teaspoon black pepper

1 teaspoon salt (adjust to taste)

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 cup panko breadcrumbs

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Lobster: If not already done, steam the lobsters until fully cooked, about 8-10 minutes. Remove the meat from the shells, chop it into bite-sized pieces, and set aside. Save the empty shells for later use.

      Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to create a roux, until it’s lightly golden.

        Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk for about 5-7 minutes until the mixture thickens slightly.

          Add Flavor: Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, cayenne pepper, black pepper, and salt. Cook for an additional minute, allowing the spices to meld together.

            Incorporate the Cheese: Remove the saucepan from heat and begin adding the sharp cheddar and Gruyère cheese, one handful at a time, stirring until melted and smooth after each addition.

              Combine Ingredients: In a large bowl, mix the drained macaroni, chopped lobster, and cheese sauce until everything is well combined.

                Assemble: Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture into the reserved lobster shells or a greased baking dish.

                  Top It Off: In a small bowl, mix panko breadcrumbs with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the mac and cheese.

                    Bake: Place the mac and cheese in the oven and bake for 20-25 minutes or until the top is golden and crispy.

                      Garnish and Serve: Once done, remove from the oven, allow to cool for a few minutes, and garnish with chopped fresh parsley before serving.
