Low-Carb Bacon Cheeseburger Casserole

1 lb ground beef

6 slices of bacon, chopped

1 small onion, diced

2 cloves garlic, minced

1 cup cauliflower rice (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup mayonnaise

2 large eggs

2 tbsp Worcestershire sauce

1 tsp mustard powder

1 tsp smoked paprika

Salt and pepper to taste

1 green onion, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the bacon grease in the skillet.

      In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Add the ground beef to the skillet and cook until browned and cooked through. Drain excess fat if necessary.

          Stir in the cauliflower rice, cooked bacon, Worcestershire sauce, mustard powder, smoked paprika, salt, and pepper. Mix until well combined and heated through, about 2-3 minutes.

            In a separate bowl, whisk together the eggs, sour cream, and mayonnaise until smooth.

              Pour the egg mixture over the beef mixture in the skillet and stir to combine.

                Transfer the mixture to a greased 9x13 inch baking dish. Top with shredded cheddar cheese.

                  Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped green onions.
