Ingredients
  

8 large flour tortillas

8 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or diced cooked bacon or ham)

1 cup diced bell peppers (red, green, or a mix)

1 cup fresh spinach, chopped (optional)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salsa or hot sauce (for serving, optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.

    Cook the Eggs: In a large skillet over medium heat, pour in the egg mixture. Stir gently until the eggs are fully cooked but still soft (about 5-7 minutes). Remove from heat and allow to cool slightly.

      Mix in the Add-ins: Once the eggs have cooled, fold in the cooked sausage, cheese, diced bell peppers, and spinach until everything is well combined.

        Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon about 1/2 cup of the egg mixture into the center of each tortilla. Fold the sides in and then roll it up from the bottom to the top, enclosing the filling.

          Wrap and Prepare for Freezing: Wrap each burrito tightly in foil or plastic wrap. If desired, you can place them in a freezer-safe bag for extra protection.

            Freezing: Label each bag with the date and contents. Place in the freezer for up to 3 months.

              To Reheat: When ready to eat, remove a burrito from the freezer. To reheat in the microwave, unwrap it, and place it on a microwave-safe plate. Heat for 2-3 minutes or until hot, turning halfway through. Alternatively, you can reheat it in the oven at 350°F (175°C) wrapped in foil for about 20-25 minutes.

                Serve: Enjoy with salsa or hot sauce on the side, if desired.
