Maple & Brown Sugar Oatmeal Muffins

1 cup rolled oats

1 cup milk (or a milk alternative)

1 ½ cups all-purpose flour

1 cup brown sugar, packed

½ cup pure maple syrup

½ cup warm melted butter (or coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

Optional: ½ cup chopped nuts (like walnuts or pecans) or dried fruit (like cranberries or raisins)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Soak Oats: In a mixing bowl, combine the rolled oats and milk. Let them soak for 15-20 minutes to soften the oats.

      Mix Wet Ingredients: In another bowl, whisk together the melted butter, brown sugar, maple syrup, eggs, and vanilla extract until well combined.

        Combine Ingredients: Add the soaked oats to the wet mixture and stir until incorporated.

          Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, baking soda, salt, and cinnamon together. If you’re adding nuts or dried fruit, fold them into the dry ingredients now.

            Combine Wet and Dry: Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix; it's okay if there are a few lumps.

              Fill Muffin Cups: Use a spoon or scoop to fill the muffin cups about ¾ full with the batter.

                Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
