Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons maple syrup

1 tablespoon olive oil

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 teaspoon ground nutmeg (optional)

Cooking spray or parchment paper for baking sheet

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with cooking spray to prevent sticking.

Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towels. Pat them dry to remove excess moisture. This helps achieve a crunchier texture.

Mix the Coating: In a large bowl, combine the maple syrup, olive oil, ground cinnamon, vanilla extract, sea salt, and ground nutmeg (if using). Stir until well mixed.

Coat the Chickpeas: Add the dried chickpeas to the bowl with the maple mixture. Gently fold until all the chickpeas are well coated.

Spread on the Baking Sheet: Transfer the coated chickpeas to the prepared baking sheet in a single layer to ensure even roasting.

Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Stir the chickpeas halfway through to ensure uniform browning. Keep an eye on them towards the end, as they can go from perfectly crunchy to burnt quickly.

Cool Down: Once they are golden brown and crunchy, remove the baking sheet from the oven and allow the chickpeas to cool for 5-10 minutes on the sheet. They will continue to crisp up as they cool.

Serve and Enjoy: Serve your Maple Cinnamon Roasted Chickpeas as a tasty snack on their own, or sprinkle them over salads and yogurt for added crunch and flavor.
