Ingredients

1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

2 tablespoons maple syrup

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

¼ cup pecans, chopped (optional)

¼ cup dried cranberries (optional)

Fresh parsley, chopped for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). This ensures a nice roast on the Brussels sprouts.

Prepare the Brussels Sprouts: In a large mixing bowl, combine the halved Brussels sprouts with olive oil, salt, pepper, and garlic powder. Toss well until they are evenly coated.

Make the Maple Dijon Sauce: In a small bowl, whisk together the maple syrup, Dijon mustard, and apple cider vinegar until smooth and well combined.

Combine: Add the Maple Dijon sauce to the Brussels sprouts in the mixing bowl. Toss to coat all the sprouts evenly with the delicious sauce.

Roast the Sprouts: Spread the coated Brussels sprouts onto a large baking sheet in a single layer. Place them in the preheated oven and roast for about 20-25 minutes, or until they are golden brown and crispy on the outside, tossing halfway through for even cooking.

Add Optional Toppings: If using, sprinkle the chopped pecans and dried cranberries over the Brussels sprouts during the last 5 minutes of roasting to toast them slightly.

Serve: Once the Brussels sprouts are done roasting, remove them from the oven and transfer to a serving dish. Garnish with freshly chopped parsley for a pop of color and freshness.

Enjoy your delectable Maple Dijon Brussels Sprouts as a side dish or as a healthy snack!
