Ingredients
  

1 pound baby carrots (or 4 large carrots, peeled and cut into sticks)

2 tablespoons unsalted butter

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

Salt and pepper to taste

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions
 

Prepare Carrots: If using large carrots, chop them into sticks of equal size to ensure even cooking. If using baby carrots, they can be used whole.

    Boil Carrots: In a medium pot, bring salted water to a boil. Add the carrots and cook for about 5-7 minutes until they are tender but still have a slight crunch. Drain and set aside.

      Make the Glaze: In a large skillet over medium heat, melt the butter. Once melted, add the maple syrup, cinnamon, nutmeg, salt, and pepper. Stir well to combine.

        Caramelize: Add the cooked carrots to the skillet and gently toss them in the maple glaze. Cook for about 5-7 minutes, stirring occasionally, until the carrots are heated through and the glaze thickens slightly.

          Finish with Lemon: Drizzle the fresh lemon juice over the carrots, stirring to incorporate it. This will brighten the flavors!
