1 pound baby carrots (or regular carrots cut into sticks)

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Optional: 1 tablespoon balsamic vinegar for extra depth

Garnish: Chopped fresh parsley for serving

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, maple syrup, thyme, sea salt, black pepper, and balsamic vinegar (if using). Whisk together until well mixed.

      Add the carrots to the bowl and toss until they are evenly coated with the maple mixture.

        Line a baking sheet with parchment paper for easy cleanup. Spread the coated carrots in a single layer on the baking sheet.

          Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, turning them halfway through for even cooking.

            Once done, remove the roasted carrots from the oven and let them cool slightly.

              Transfer to a serving dish, garnish with chopped fresh parsley, and enjoy!
