2 large sweet potatoes, peeled and diced

1/4 cup unsalted butter, softened

1/4 cup pure maple syrup

1/2 cup half-and-half (or milk for a lighter version)

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon vanilla extract

Salt to taste

1/2 cup pecans, toasted and roughly chopped

Chopped fresh parsley for garnish (optional)

Instructions
 

Prepare Sweet Potatoes: In a large pot, add the diced sweet potatoes and cover them with water. Bring to a boil, then lower the heat and simmer until the sweet potatoes are fork-tender, about 15-20 minutes.

    Drain and Cook Off Water: Drain the sweet potatoes and return them to the pot. Allow them to sit for a few minutes to let off any remaining steam and moisture.

      Mash: Using a potato masher or a fork, mash the sweet potatoes until smooth. You can also use a hand mixer for an ultra-creamy consistency.

        Add Ingredients: To the mashed sweet potatoes, add the softened butter, maple syrup, half-and-half, ground cinnamon, nutmeg, and vanilla extract. Mix well until fully combined and creamy.

          Season: Taste the mash and carefully add salt as needed, balancing the sweetness with a touch of salt.

            Fold in Pecans: Gently fold in the toasted pecans, reserving a handful for garnishing if desired.
