2 chicken breasts, boneless and skinless

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup chicken broth

1 cup heavy cream

1 cup sun-dried tomatoes, chopped

1 cup fresh spinach

1 cup grated Parmesan cheese

12 oz pasta (penne or fettuccine works well)

Fresh basil for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken and sear for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Create the Sauce: In the same skillet, lower the heat to medium and add the minced garlic, sautéing for about 30 seconds until fragrant. Add Italian seasoning and optional red pepper flakes. Pour in the chicken broth and let it simmer for 2-3 minutes, scraping up any bits from the bottom of the pan.

        Add Cream & Tomatoes: Stir in the heavy cream, sun-dried tomatoes, and Parmesan cheese. Mix well and cook for another 3-4 minutes until the sauce thickens slightly.

          Incorporate Spinach: Add the fresh spinach to the skillet, stirring until wilted. Meanwhile, slice the cooked chicken into strips and return it to the skillet.

            Combine Pasta: Add the cooked pasta to the skillet and toss everything together until the pasta is well-coated in the creamy sauce.

              Serve: Plate the pasta and garnish with fresh basil and a sprinkle more of Parmesan cheese if desired.
