Marshmallow-Surprise Hot Cocoa Cookies

Ingredients
  

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

1 cup powdered sugar (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

    Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

      Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix!

          Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the cookie dough.

            Prepare the Surprise: Take about a tablespoon of dough, flatten it slightly in your hand, and place 3-4 mini marshmallows in the center. Wrap the dough around the marshmallows to create a ball, making sure they are completely enclosed. Repeat for all the dough.

              Coat in Powdered Sugar: Roll each cookie ball in powdered sugar until well-coated. Place them on the prepared baking sheets, spacing them about 2 inches apart.

                Bake: Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft. They will continue to cook as they cool.

                  Cool and Serve: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
