Mediterranean Chicken Zucchini Boats

4 medium zucchinis

1 lb ground chicken

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, sliced

1 tsp dried oregano

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Zucchini Boats: Slice the zucchinis in half lengthwise and scoop out the center using a spoon, leaving about 1/4 inch of flesh around the edges to create boats. Reserve the scooped-out flesh and set the zucchini halves aside.

      Cook the Chicken Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the garlic and cook for an additional minute until fragrant.

        Add Chicken: Add the ground chicken to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.

          Combine Ingredients: Chop the reserved zucchini flesh and add it to the skillet along with the cherry tomatoes, spinach, oregano, paprika, salt, and pepper. Stir everything together and cook for about 3-4 minutes until the spinach wilts and the tomatoes soften slightly.

            Incorporate Feta and Olives: Remove the skillet from heat and fold in the crumbled feta cheese and Kalamata olives.

              Fill Zucchini Boats: Place the hollowed zucchini halves on a baking sheet and fill each boat generously with the chicken mixture.

                Bake: Place in the preheated oven and bake for 20-25 minutes, or until the zucchini is tender and the filling is heated through.

                  Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley and serve with lemon wedges on the side for squeezing over the top.
