For the crust:

1 cup unsalted butter, softened

½ cup granulated sugar

2 cups all-purpose flour

½ teaspoon salt

1 teaspoon vanilla extract

For the lemon filling:

1 cup granulated sugar

½ cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

4 large eggs

¼ cup all-purpose flour

½ teaspoon baking powder

Powdered sugar for dusting (optional)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Crust: In a large mixing bowl, beat the softened butter and ½ cup sugar together until light and fluffy. Gradually mix in 2 cups of flour and ½ teaspoon of salt, then stir in the vanilla extract. The mixture will be crumbly.

      Press the Crust: Pour the crust mixture into the prepared baking pan and press it evenly across the bottom. Use the back of a measuring cup for an even layer. Bake in the preheated oven for 15-20 minutes, or until lightly golden.

        Prepare the Filling: While the crust is baking, in a separate bowl, whisk together 1 cup sugar, lemon juice, and lemon zest. Add the eggs one at a time, mixing well after each addition. Then, whisk in ¼ cup of flour and ½ teaspoon baking powder until smooth.

          Combine Layers: Once the crust is done, remove it from the oven and pour the lemon filling over the baked crust. Spread it evenly.

            Bake Again: Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch. Careful not to overbake, as you want a creamy texture.

              Cool and Serve: Allow the lemon bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out onto a cutting board. Dust with powdered sugar if desired, then cut into squares or rectangles.
