Ingredients

3 cups cooked, shredded chicken

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

2 cups shredded cheddar cheese, divided

1 cup cooked white rice

1 cup frozen mixed vegetables (peas, carrots, corn)

1 tsp garlic powder

1 tsp onion powder

½ tsp black pepper

2 cups crushed buttery crackers (e.g., Ritz)

½ cup unsalted butter, melted

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix the Chicken Base: In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, cooked rice, frozen mixed vegetables, garlic powder, onion powder, and black pepper. Stir until all the ingredients are well-blended.

Prepare the Casserole Dish: Grease a 9x13-inch casserole dish lightly with cooking spray or butter. Pour the chicken mixture into the dish, spreading it evenly.

Prepare the Topping: In a separate bowl, mix the crushed buttery crackers with the melted butter until all cracker crumbs are coated evenly.

Assemble the Casserole: Sprinkle the remaining 1 cup of cheddar cheese over the chicken mixture in the casserole dish. Then, evenly distribute the buttery cracker mixture on top of the cheese.

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the casserole is bubbling and the topping is golden brown.

Garnish and Serve: Once done, remove the casserole from the oven and let it cool for about 5 minutes. Garnish with freshly chopped parsley. Serve hot and enjoy!
