Ingredients

1 pound elbow macaroni

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

4 cups whole milk

1 cup sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup cream cheese, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper, to taste

1 cup Panko breadcrumbs

1 tablespoon olive oil

1/2 cup Parmesan cheese, grated

Fresh chives, finely chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente according to package directions. Drain and set aside.

Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Whisk in the flour to form a roux, cooking for about 2-3 minutes until lightly golden. Gradually add the whole milk while whisking continuously to avoid lumps. Continue to cook until the mixture thickens, about 5-7 minutes.

Add the Cheeses: Remove the saucepan from the heat. Stir in the sharp cheddar, Gruyère, and cream cheese until melted and smooth. Add the garlic powder, onion powder, Dijon mustard, and season with salt and pepper to taste.

Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce until evenly coated.

Prepare the Topping: In a small bowl, mix the Panko breadcrumbs with olive oil and Parmesan cheese until combined.

Assemble the Dish: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased 3-quart baking dish. Evenly sprinkle the breadcrumb mixture over the top.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are bubbling.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chives before serving. Enjoy your decadent million dollar mac and cheese!
