Mini Chicken Caesar Crunch Wraps

1 lb boneless, skinless chicken breasts

2 cups romaine lettuce, chopped

1/2 cup Caesar dressing

1/4 cup grated Parmesan cheese

1 cup croutons, crushed

8 large flour tortillas

1 cup shredded mozzarella cheese

Olive oil, for cooking

Salt and pepper, to taste

Optional: Fresh parsley for garnish

Prep the Chicken: Season chicken breasts with salt and pepper. Heat a drizzle of olive oil in a skillet over medium heat. Cook chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest for a few minutes. Then, slice the chicken into thin strips.

    Make the Caesar Mixture: In a large bowl, combine the chopped romaine lettuce, Caesar dressing, grated Parmesan cheese, and crushed croutons. Toss until the lettuce is well coated and everything is evenly distributed.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. In the center, layer some of the chicken slices, followed by a generous amount of the Caesar mixture. Sprinkle shredded mozzarella cheese on top.

        Fold the Wrap: Carefully fold in the sides of the tortilla, then roll from the bottom up to form a snug wrap. Repeat with the remaining tortillas and filling.

          Cook the Wraps: In the same skillet used for chicken, add a little more olive oil and heat over medium heat. Place the wraps seam-side down in the skillet and cook for about 3-4 minutes on each side, until golden brown and crispy. Work in batches if necessary.

            Serve: Cut the wraps in half diagonally, and if desired, garnish with fresh parsley. Serve immediately while warm and crunchy.
