Mini Chicken Fajita Crescent Rolls

1 lb (450g) chicken breast, diced

1 tablespoon olive oil

1 bell pepper (any color), sliced

1 medium onion, sliced

1 tablespoon fajita seasoning

1 can (8 oz) crescent roll dough

1 cup shredded cheddar cheese

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken and sauté for about 5-7 minutes until the chicken is cooked through.

      Add Vegetables: Add the sliced bell pepper and onion to the skillet. Sprinkle in the fajita seasoning and stir everything together. Cook for an additional 3-5 minutes until the vegetables have softened. Remove from heat and let cool slightly.

        Prepare the Crescent Rolls: Unroll the crescent roll dough and separate it into triangles as indicated on the packaging.

          Fill the Rolls: Place a spoonful of the chicken and vegetable mixture at the wide end of each triangle. Sprinkle a little cheddar cheese on top before rolling up the dough, starting from the wide end towards the point. Ensure the filling is enclosed.

            Bake: Line a baking sheet with parchment paper. Arrange the filled crescent rolls on the baking sheet, leaving space between them. Bake in the preheated oven for 12-15 minutes or until golden brown.

              Serve: Once baked, remove from oven and allow to cool slightly. Serve warm, garnished with fresh cilantro, and alongside sour cream and lime wedges.
