Ingredients
  

1 package of refrigerated wonton wrappers (around 30 wrappers)

1 lb boneless, skinless chicken breast, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, diced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Wonton Cups: Gently press each wonton wrapper into the cups of a mini muffin tin. Lightly brush each wrapper with olive oil to help with browning. Bake for about 8-10 minutes or until they are golden and crisp. Remove from the oven and set aside.

      Cook the Chicken: In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the diced chicken. Season with chili powder, cumin, garlic powder, salt, and pepper. Sauté for about 5-7 minutes or until the chicken is cooked through and no longer pink.

        Add Vegetables: To the skillet, add the sliced bell peppers and onion. Sauté for another 3-5 minutes until the veggies are tender yet still vibrant.

          Assembly: Once the wonton cups are cooled slightly, spoon the chicken and veggie mixture into each cup, filling them generously.

            Top with Cheese: Sprinkle a layer of shredded cheddar cheese on top of each filled wonton cup.

              Melt the Cheese: Return the muffin tin to the oven for about 5 minutes, or until the cheese is melted and bubbly.

                Serve: Remove from the oven, let cool for a couple of minutes, and garnish with chopped cilantro. Serve with sour cream and lime wedges on the side.
