Ingredients

8 ounces spaghetti

2 boneless, skinless chicken breasts

1 cup Monterey Jack cheese, shredded

1 bell pepper (red or green), sliced

1 small onion, thinly sliced

2 cloves garlic, minced

1 cup cooked bacon, chopped

1 cup barbecue sauce

1 teaspoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Instructions

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package directions until al dente. Drain and set aside, reserving a small amount of pasta water.

Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and smoked paprika. In a skillet over medium heat, add olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side until fully cooked through. Remove from the pan and let cool slightly, then chop into bite-sized pieces.

Sauté the Vegetables: In the same skillet, add the sliced onion and bell pepper. Sauté for 4-5 minutes until they are tender. Then add the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients: In a large mixing bowl, combine the cooked spaghetti, sautéed vegetables, chopped chicken, bacon, and barbecue sauce. Mix well, adding a splash of reserved pasta water if the mixture feels dry.

Add Cheese: Preheat your oven to 350°F (175°C). Transfer the spaghetti mixture into a large baking dish. Sprinkle the shredded Monterey Jack cheese evenly over the top.

Bake: Place the baking dish in the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with freshly chopped cilantro or parsley before serving. Enjoy your unique Monterey Chicken Spaghetti!
