1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

2 cups marinara sauce

1 can (14 oz) diced tomatoes, undrained

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup shredded cheddar cheese

9-12 lasagna noodles, broken into pieces

1 tsp Italian seasoning

1 tsp smoked paprika

Salt and pepper to taste

Fresh basil for garnish (optional)

Olive oil for cooking

Brown the Meat: In a large skillet over medium heat, heat a drizzle of olive oil. Add the ground beef or turkey, along with the diced onion and minced garlic. Cook until the meat is browned and the onions are translucent, about 5-7 minutes. Drain any excess fat.

    Add Sauces: Stir in the marinara sauce and diced tomatoes (with juice). Mix well and let it simmer for 5 minutes.

      Layer in Ricotta: Remove the skillet from heat and dollop the ricotta cheese across the meat mixture. Gently swirl it into the sauce without fully mixing it in; you want to retain pockets of ricotta.

        Add Noodles and Cheeses: Sprinkle the broken lasagna noodles over the top of the mixture, then sprinkle Italian seasoning, smoked paprika, salt, and pepper. Mix gently to combine but keep some layers intact. Top with shredded mozzarella and cheddar cheese evenly.

          Cover and Cook: Cover the skillet with a lid and reduce the heat to low. Let it cook for 20-25 minutes, or until the noodles are tender and the cheeses are melted and bubbly.

            Garnish and Serve: Once ready, remove from heat and let it cool for a few minutes. Garnish with fresh basil, if desired, before serving. Enjoy your hearty cowboy meal!
