1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 can (21 oz) cherry pie filling

Fresh cherries for garnish (optional)

Mint leaves for garnish (optional)

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Refrigerate for 30 minutes to set.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract and mix until well incorporated.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth.

        Assemble the Cheesecake: Pour the cheesecake filling over the chilled crust in the springform pan. Spread it evenly with a spatula. Refrigerate for at least 4 hours, or overnight for best results.

          Add the Cherry Topping: Once the cheesecake has set, spread the cherry pie filling evenly over the top. You can make a decorative swirl with a knife if desired.
