Ingredients

2 cups fresh figs, stems removed and chopped

1/2 cup granulated sugar (adjust based on sweetness preference)

2 tablespoons lemon juice

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

Pinch of salt

Instructions

Prepare the Figs: Rinse the fresh figs under cold water. Pat them dry and remove the stems. Chop the figs into small pieces to release their juices.

Combine Ingredients: In a medium mixing bowl, combine the chopped figs, granulated sugar, lemon juice, vanilla extract, cinnamon (if using), and a pinch of salt. Stir gently until the sugar begins to dissolve and the figs start to release their natural juices.

Let It Sit: Cover the bowl with plastic wrap and let it sit at room temperature for about 1-2 hours. This step helps to extract more juice from the figs and allows the flavors to meld together.

Blend or Mash (Optional): After sitting, you can choose to mash the figs slightly with a fork for a chunky texture or blend them using a food processor for a smoother consistency. For a rustic feel, light mashing is recommended.

Transfer to a Jar: Once you achieve your desired texture, transfer the fig jam into a clean glass jar. Use a spatula to scrape out all the sticky goodness from the bowl.

Chill and Enjoy: Seal the jar with a lid and chill in the refrigerator for at least 2 hours before serving. The jam will thicken as it cools. Enjoy it on toast, with cheese, or as a topping for desserts!
