Ingredients
  

For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For the Peach Layer:

2 cups fresh peaches, diced (or frozen, thawed)

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch

Pinch of salt

For Topping:

Whipped cream, for serving

Fresh peach slices, for garnish

Mint leaves, for garnish (optional)

Instructions
 

Preheat & Prepare:

    - Grease a 9x9 inch baking pan with a bit of butter or line with parchment paper for easy removal.

      Make the Crust:

        - In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until fully combined and the mixture resembles wet sand.

          - Press the mixture firmly into the bottom of the prepared baking pan, creating an even layer. Use the back of a measuring cup to ensure it's tightly packed.

            - Place the crust in the refrigerator to chill while you prepare the filling.

              Prepare the Cheesecake Filling:

                - In a large bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

                  - Gradually add in powdered sugar and vanilla extract, mixing until well-combined.

                    - In a separate bowl, whip the heavy cream until stiff peaks form.

                      - Gently fold the whipped cream into the cream cheese mixture until combined.

                        Make the Peach Layer:

                          - In a medium saucepan over medium heat, combine the diced peaches, granulated sugar, lemon juice, cornstarch, and a pinch of salt.

                            - Cook for about 5-7 minutes until the peaches release their juices and the mixture thickens. Remove from heat and let cool slightly.

                              Assemble the Bars:

                                - Spread the cheesecake filling evenly over the chilled crust in the baking pan.

                                    Freeze:
