Ingredients

1 ½ cups crushed graham crackers

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

1 cup powdered sugar

½ cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

1 teaspoon vanilla extract

1 cup whipped topping (like Cool Whip)

Lemon slices and zest for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Mix until crumbly and well combined. Press this mixture firmly into the bottom of a greased 9x9-inch pan to form an even layer. Place it in the refrigerator while you prepare the filling.

Make the Cheesecake Filling: In another bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the powdered sugar, mixing until fully integrated.

Add Flavors: Mix in the fresh lemon juice, lemon zest, and vanilla extract. Continue to beat until everything is thoroughly combined and smooth.

Incorporate Whipped Topping: Gently fold in the whipped topping with a spatula until the mixture is well blended but still light and fluffy.

Assemble the Bars: Carefully spread the lemon cheesecake filling over the prepared graham cracker crust in the pan, smoothing it out with a spatula.

Chill Until Set: Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until the filling is firm and set.

Serve and Garnish: Once set, cut the cheesecake into bars. Garnish with additional lemon slices and lemon zest for a fresh touch. Serve chilled.
