For the Crust:

24 Oreo cookies (crushed)

4 tablespoons unsalted butter (melted)

For the Cheesecake Filling:

16 oz cream cheese (softened)

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons instant coffee granules (or espresso powder)

1/4 cup hot water (to dissolve coffee)

8 Oreo cookies (chopped, for mixing in)

For the Topping:

1 cup heavy whipping cream

1/4 cup powdered sugar

1 tablespoon cocoa powder (for dusting)

2 Oreo cookies (crumbled, for garnish)

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the crushed Oreo cookies and melted butter. Mix until the mixture resembles wet sand.

      - Press the mixture firmly into the bottom of a 9x9-inch (or similar sized) baking dish to form an even layer. Place in the refrigerator while preparing the filling.

        Make the Cheesecake Filling:

          - In a small bowl, dissolve the instant coffee granules in hot water; set aside to cool slightly.

            - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Add the powdered sugar and vanilla extract, and mix well until fully combined.

                - In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.

                  - Pour in the dissolved coffee mixture and fold until just combined, making sure not to deflate the whipped cream.

                    - Gently fold in the chopped Oreo cookies.

                      Assemble the Bars:

                        - Remove the crust from the refrigerator. Spread the cheesecake filling evenly over the crust, smoothing the top with a spatula.

                          - Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.

                            Prepare the Topping:

                              - In a mixing bowl, whip the heavy cream with the powdered sugar until soft peaks form.
