2 cups fresh pineapple chunks (or canned, drained)

1 cup coconut milk (full fat for creaminess)

1/4 cup honey or agave syrup (adjust for sweetness)

1 tsp vanilla extract

1/2 cup plain Greek yogurt (optional for creaminess)

Fresh mint leaves (for garnish, optional)

Instructions
 

Blend the Base: In a blender, combine the fresh pineapple chunks, coconut milk, honey (or agave syrup), vanilla extract, and Greek yogurt (if using). Blend until the mixture is smooth and creamy.

    Taste Test: Give the mixture a quick taste. If you prefer it sweeter, add a little more honey or agave syrup and blend again.

      Prepare the Molds: Pour the blended mixture into popsicle molds, leaving a little space at the top for expansion during freezing.

        Insert Sticks: If your popsicle molds come with sticks, insert them in the center. If not, you can cover the tops with aluminum foil and use a wooden stick or a plastic spoon inserted through the foil.

          Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until solid.

            Release the Popsicles: To remove the popsicles, run warm water over the outside of the molds for a couple of seconds. Gently pull the popsicles out.
