For the Cheesecake Filling:

8 oz cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 cup fresh strawberries, pureed

For the Crunchy Topping:

1 cup crushed graham crackers

1 cup crispy rice cereal

1/2 cup unsalted butter, melted

1/4 cup brown sugar

1 teaspoon cinnamon

For Garnish:

Fresh strawberries, halved

Mint leaves (optional)

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the crushed graham crackers, crispy rice cereal, melted butter, brown sugar, and cinnamon. Mix until everything is evenly coated.

      - Press half of this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Set aside the remaining mixture for topping later.

        Make the Cheesecake Filling:

          - In another large bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.

            - Gradually add the powdered sugar and vanilla extract, mixing until well combined.

              - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

                - Carefully fold in the strawberry puree until just combined, creating a lovely pink cheesecake filling.

                  Assemble the Cheesecake:

                    - Spread the strawberry cheesecake filling over the crust in the springform pan, smoothing the top with a spatula.

                      - Refrigerate the cheesecake for at least 4-5 hours or until set.

                        Prepare the Crunchy Topping:

                          - Once the cheesecake is set, take the reserved crunchy mixture and sprinkle it evenly over the top of the cheesecake.

                            Garnish and Serve:
