1 cup rolled oats

1 cup whole wheat flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup coconut oil, melted (or butter)

1/2 cup brown sugar, packed

1/4 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

1/4 cup dried fruit (raisins, cranberries, or apricots, optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix dry ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Whisk until well combined.

      Combine wet ingredients: In another bowl, stir together the melted coconut oil, brown sugar, honey (or maple syrup), egg, and vanilla extract until smooth and creamy.

        Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips, nuts, and dried fruit if using.

          Shape the cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

            Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will set up as they cool.

              Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
